อาหารเป็นหนึ่งในปัจจัยสี่ที่มีความสำคัญและจำเป็นต่อการดำรงชีวิต มนุษย์ส่วนใหญ่สามารถดำรงชีวิตอยู่ได้ในระยะเวลา 7-10 วันเท่านั้น โดยปราศจากอาหารหล่อเลี้ยงร่างกาย แต่คุณทราบหรือไม่ว่า เรากำลังเผชิญกับภาวะที่เรียกว่า “วิกฤตอาหารโลก (Global Food Crisis)” ซึ่งเป็นปัญหาที่ใหญ่ที่สุดในประวัติศาสตร์ของมนุษย์โลก โดยธนาคารโลก (World Bank) ได้ระบุว่า วิกฤตอาหารโลกได้เริ่มขึ้นแล้วตั้งแต่ปี 2565 ที่ผ่านมา นอกจากนี้ จากรายงานของ Global Report on Food Crises 2022 ล่าสุดระบุว่า ประชากรเกือบ 193 ล้านคน ใน 53 ประเทศ กำลังเผชิญกับปัญหาความไม่มั่นคงด้านอาหารอย่างเฉียบพลัน ซึ่งเพิ่มขึ้นจากปีที่ผ่านมาเกือบ 40 ล้านคน อันเป็นผลพวงมาจากปัจจัยหลายอย่าง ได้แก่

  • ภาวะสงครามระหว่างรัสเซียและยูเครนที่ยืดเยื้อต่อเนื่องหลายเดือน ส่งผลให้ราคาวัตถุดิบทางการเกษตรที่นำมาใช้ประกอบอาหารปรับตัวสูงขึ้นอย่างต่อเนื่อง เนื่องจากทั้งสองประเทศถือเป็นผู้ผลิตและผู้ส่งออกวัตถุดิบทางการเกษตรเพื่อนำไปประกอบอาหารรายใหญ่ของโลก ยิ่งไปกว่านั้นราคาก๊าซที่ปรับตัวเพิ่มสูงขึ้น ส่งผลทำให้ราคาปุ๋ยต้องปรับสูงขึ้นตามไปด้วยจากการที่ก๊าซเป็นต้นทุนสำคัญในการผลิตแอมโมเนียในปุ๋ย และราคาอาหารก็ปรับตัวสูงขึ้นอย่างต่อเนื่อง อาทิ ราคาข้าวสาลีในเดือนมีนาคม 2565 ที่ปรับตัวขึ้นกว่า 31 % เมื่อเทียบกับเดือนธันวาคม 2564 หรือจะเป็นราคาข้าวโพดที่ปรับตัวสูงขึ้นกว่า 32 % ในช่วงเวลาเดียวกัน เป็นข้อจำกัดในการเข้าถึงแหล่งอาหารของประเทศต่าง ๆ โดยเฉพาะประเทศที่ยากจน

  • หลายประเทศมีนโยบายปกป้องตัวเองเพื่อสร้างความมั่นคงทางอาหาร (Food Protectionism) และเริ่มประกาศกักตุนและจำกัดหรือห้ามการส่งออกแล้วกว่า 30 ประเทศ เพื่อสำรองวัตถุดิบอาหารและพลังงานไว้สร้างความมั่นคงทางอาหารและการบริโภคภายในประเทศก่อนการส่งออก อาทิ อินโดนีเซียจำกัดการส่งออกน้ำมันปาล์มจนถึง 31 ธันวาคม 2565 มาเลเซียจำกัดการส่งออกเนื้อสัตว์ปีกและไก่ จำนวน 6 ล้านตัวต่อเดือน อินเดียระงับการส่งออกข้าวสาลีเป็นการชั่วคราว

  • สภาวะโลกร้อน (Global Warming) ที่ถูกเร่งสปีดให้สูงเพิ่มขึ้น ๆ จากสารพัดกิจกรรมปล่อยก๊าซเรือนกระจกของมวลมนุษยชาติ ไม่เว้นแม้แต่การผลิตอาหารอย่างการทำปศุสัตว์ที่ปล่อยก๊าซคาร์บอนไดออกไซด์สู่บรรยากาศโลกสูงเป็นอันดับสองรองจากภาคอุตสาหกรรม ทำให้เกิดสภาวะโลกร้อน สภาพอากาศแปรปรวน เกิดความแห้งแล้งและฝนตกชุก น้ำท่วมในหลายประเทศ ส่งผลต่อพื้นที่เพาะปลูก และผลผลิตทางการเกษตรตกต่ำทั่วโลก

เมื่อไม่นานมานี้ นักวิทยาศาสตร์ ศาสตราจารย์ Julian Cribb ยังได้ออกมาเตือนว่า สภาวะโลกร้อนและการเปลี่ยนแปลงทางสภาพอากาศในทั่วโลกนี้ จะทำให้มนุษย์ขาดแคลนอาหาร จนกระทั่งอาหารหมดโลกภายในปี 2593 อีกทั้งสถาบันทรัพยากรแห่งโลก ยังได้รายงานว่า ในปี 2593 จะต้องมีการผลิตอาหารเพิ่มถึง 50 % ของปัจจุบัน ถึงจะสามารถรองรับจำนวนประชากรได้ นอกจากนี้พวกเรายังประสบเคราะห์ซ้ำกรรมซัดจากปัจจัยเร่งที่จะทำให้อาหารขาดแคลนเร็วขึ้น นั่นคือจำนวนประชากรทั่วโลกที่เพิ่มสูงขึ้นทุกปีอีกด้วย

นวัตกรรม “อาหารแห่งอนาคต (Future Food)”

ถ้าโจทย์ที่เราต้องหาคำตอบคือ ทำอย่างไรถึงจะลดการเพิ่มขึ้นของอุณหภูมิโลก ไปพร้อม ๆ กับการเพิ่มผลผลิตทางอาหารให้เพียงพอต่อประชากรโลกที่เพิ่มขึ้น ?

สิ่งที่ตอบโจทย์นี้ได้ดีที่สุดคือ การนำเทคโนโลยีและนวัตกรรมมาสร้างแหล่งอาหารใหม่ ที่เพิ่มผลผลิตได้เร็วกว่า ใช้พื้นที่เพาะเลี้ยงน้อยกว่าการทำปศุสัตว์แบบเก่า ลดทรัพยากรอาหารในการเลี้ยงดู ที่สำคัญยังให้คุณค่าทางโภชนาการสูงและดีต่อความยั่งยืนของโลก เพราะสามารถลดการปล่อยก๊าซเรือนกระจก ลดการสร้างขยะเหลือทิ้ง (Zero Waste) จากกระบวนการผลิต ตั้งแต่ต้นน้ำจนถึงปลายน้ำ ซึ่งในปัจจุบันมีการบัญญัติศัพท์ขึ้นและเรียกแหล่งอาหารใหม่ที่เกิดจากการนำเทคโนโลยีและนวัตกรรมมาสร้างอาหารว่า “อาหารแห่งอนาคต (Future Food)”

ฉะนั้นวันนี้ “อาหารแห่งอนาคต (Future Food)” จึงไม่ใช่สิ่งที่ไกลตัวพวกเราอีกต่อไป แต่เป็นทางออกของเราและของโลก ที่อาหารจะไม่เป็นแค่ของอร่อยกินอิ่มท้อง แต่จะเป็นอาหารที่ดีต่อใจ ดีต่อสุขภาพ และดีต่อโลกใบนี้ของเรา

เทรนด์อุตสาหกรรม “อาหารแห่งอนาคต (Future Food)”

เทรนด์อุตสาหกรรม “อาหารแห่งอนาคต (Future Food)” คือ เทรนด์อาหารอย่างหนึ่งของอุตสาหกรรมอาหารโลกที่ต่อยอดกระบวนการผลิตอาหารแบบเดิม ให้ตอบโจทย์การลดสภาวะโลกร้อนไปพร้อมกับสร้างระบบอาหารที่เน้นคุณค่าทางโภชนาการสูงและดีต่อความยั่งยืนของโลก เป็นที่มาของความหลากหลายในการต่อยอดที่ไม่จำกัดรูปแบบหน้าตาของอาหารอนาคต ขอเพียงทำแล้วตอบโจทย์แนวทาง “ดีต่อใจ-ดีต่อสุขภาพ-ดีต่อโลก” ตัวอย่างแนวคิดกว้าง ๆ ของเทรนด์อุตสาหกรรม “อาหารแห่งอนาคต (Future Food)” ได้แก่

  1. เทรนด์อุตสาหกรรม Novel Food หรือที่เรียกในภาษาไทยว่า “อาหารใหม่” กระทรวงสาธารณสุขได้ให้ความหมายของ “Novel Food หรือ อาหารใหม่” ไว้ 3 ข้อ ดังนี้

  • อาหารใหม่ หมายถึง อาหารหรือส่วนประกอบของอาหาร ที่ปรากฏหลักฐานทางวิชาการว่ามีประวัติการบริโภคเป็นอาหารน้อยกว่า 15 ปี

  • อาหารใหม่ หมายถึง อาหารหรือส่วนประกอบของอาหาร ที่ได้จากกระบวนการผลิตที่มิใช่กระบวนการผลิตโดยทั่วไปของอาหารนั้น ๆ ที่ทำให้ส่วนประกอบ โครงสร้างของอาหาร รูปแบบของอาหารนั้นเปลี่ยนแปลงไปอย่างมีนัยสำคัญ ส่งผลต่อคุณค่าทางโภชนาการ กระบวนการทางเคมีภายในร่างกายของสิ่งมีชีวิต หรือระดับของสารที่ไม่พึงประสงค์

  • อาหารใหม่ หมายถึง ผลิตภัณฑ์อาหารที่มีวัตถุตามข้อ 1) และ ข้อ 2) เป็นส่วนประกอบ

อธิบายแบบให้เข้าใจง่าย ๆ Novel Food ก็คือ

  • เป็นอาหารที่ไม่เคยถูกนำมาเป็นอาหารมาก่อน หรือมีการบริโภคน้อยกว่า 15 ปี

  • เป็นอาหารที่ใช้เทคโนโลยีหรือนวัตกรรมแปลกใหม่ที่ไม่เคยมีมาก่อนในการผลิตอาหารนั้น

ตัวอย่างของ Novel Food ได้แก่

  • เนื้อเทียม (Plant-based Protein) จากโปรตีนทางเลือก ได้แก่ พืช เห็ด และธัญพืชต่าง ๆ

  • เนื้อจากห้องแล็บ (Cultured Meat) การเพาะตัวอย่างเนื้อเยื่อเซลล์สัตว์ให้เพิ่มปริมาณ

  • อาหารนวัตกรรมใหม่ ตัวอย่างเช่น ใช้ Nano Food ทำน้ำพริกกะปิผง

  • ซูเปอร์ฟูด (Super Food) อาหารใหม่ ๆ ที่ให้สารอาหารสูงกว่า เช่น แมลง สาหร่าย

2. เทรนด์อุตสาหกรรมส่งเสริมสุขภาพ (Functional Food)

Functional Food คือ อาหารปกติที่มีการใส่คุณประโยชน์ทางโภชนาการเฉพาะเข้าไปส่งเสริมสุขภาพในด้านต่าง ๆ และตัดลดสารอาหารที่ให้ประโยชน์น้อยออกไป เช่น นม Lactose Free สำหรับผู้แพ้นมวัว หรือโปรตีนบาร์เพื่อสุขภาพที่เพิ่มคุณประโยชน์โดยใช้โปรตีนจากผงจิ้งหรีดบด

3. เทรนด์อุตสาหกรรมเกษตรอินทรีย์ (Organic Food)

คือเทรนด์อุตสาหกรรมแปรรูปที่ผลิตจากวัตถุดิบอาหารที่ได้จากการเพาะปลูกพืชผัก หรือทำฟาร์มปศุสัตว์ ด้วยการใช้แนวทางเกษตรอินทรีย์ ที่คำนึงถึงการพึ่งพากันของระบบนิเวศทางธรรมชาติทั้งระบบ ลดหรือไม่พึ่งพาสารเคมี ทำให้ได้วัตถุดิบอาหารที่ปลอดภัยจากสิ่งปนเปื้อน ดีต่อผู้บริโภคและดีต่อสิ่งแวดล้อม

4. เทรนด์อุตสาหกรรมแนวคิดการลดขยะเหลือทิ้ง (Zero Waste Cooking)

คือเทรนด์อุตสาหกรรมอาหารที่คำนึงถึงการลดขยะเหลือทิ้งจากขั้นตอนการสร้างอาหาร ตั้งแต่เพาะปลูก ขนส่ง แปรรูป ปรุงอาหาร ตลอดจนบรรจุภัณฑ์สินค้า เพราะขยะจากอาหารเหลือทิ้งที่ฝังกลบดิน ถึงแม้จะเกิดการย่อยสลายตามธรรมชาติ แต่ก็มีส่วนเพิ่มก๊าซมีเทนที่ก่อให้เกิดสภาวะเรือนกระจกที่ส่งผลต่ออุณหภูมิโลกสูงขึ้นเช่นกัน

Global Food Crisis

Food is one of the four essential factors necessary for survival. Most humans can only survive for 7-10 days without nourishment. But did you know that we are facing a situation known as “Global Food Crisis”? This is the most significant problem in the history of mankind. The World Bank has stated that the Global Food Crisis began in the year 2022. Moreover, the recent Global Report on Food Crises 2022 indicates that nearly 193 million people in 53 countries are facing acute food insecurity, an increase of nearly 40 million people from the previous year, resulting from several factors including:

  • The ongoing war between Russia and Ukraine, which has continued for several months, has caused agricultural input prices to rise continuously since both countries are major producers and exporters of agricultural raw materials for food. Furthermore, the rising gas prices have led to increased fertilizer prices, as gas is a crucial cost in ammonia production for fertilizers. Consequently, food prices have been rising steadily, such as wheat prices which increased by over 31% in March 2022 compared to December 2021, and corn prices which rose by over 32% during the same period, creating limitations in access to food for various countries, particularly poorer nations.

  • Many countries are implementing self-protection policies to ensure food security and have begun declaring stockpiling and limiting or banning exports in over 30 countries to secure food and energy raw materials for internal consumption before export. For instance, Indonesia has restricted palm oil exports until December 31, 2022, Malaysia has limited exports of poultry and chicken to 6 million head per month, and India has temporarily suspended wheat exports.

  • The accelerating global warming caused by numerous greenhouse gas emissions from human activities, including food production such as livestock farming, which is the second-largest source of carbon dioxide emissions after industry, has led to rising global temperatures and erratic weather patterns, causing droughts and excessive rainfall, floods in many countries, and negatively impacting agricultural production areas and yields worldwide.

Recently, scientist Professor Julian Cribb warned that global warming and climate change would lead to food shortages, potentially resulting in a complete food crisis by 2050. Furthermore, the World Resources Institute reported that by 2050, food production would need to increase by 50% from current levels to sustain the population. Additionally, we are beset by compounding factors accelerating food shortages, namely the continuously rising global population each year.

The Innovation of “Future Food”

If the question we need to answer is How can we reduce the increase in global temperatures while simultaneously increasing food production to meet the needs of a growing global population?

The best answer to this question is the use of technology and innovation in creating new food sources that can yield faster, require less space than traditional livestock farming, reduce food resources used for sustenance, and importantly, provide high nutritional value that is beneficial for the planet's sustainability. This can reduce greenhouse gas emissions and eliminate waste (Zero Waste) from the production process, from upstream to downstream. Currently, a term has been coined to refer to new food sources created through technology and innovation as “Future Food.”

Therefore, today, “Future Food” is no longer a distant concept but represents our solution and that of the world, where food will not merely be delicious and satisfying but will also be beneficial for our health, our hearts, and the world we inhabit.

Industrial Trends of “Future Food”

The industrial trend of “Future Food” is a food trend within the global food industry that utilizes traditional food production processes while addressing the reduction of global warming, simultaneously creating a food system that emphasizes high nutritional value and sustainability. The diversity of development in this trend does not limit the appearance of future food, as long as it aligns with the principles of being beneficial for health, well-being, and the planet. Examples of the broad concept of the industrial trend of “Future Food” include:

  1. Novel Food Industry Trend, which is referred to in Thai as “อาหารใหม่” (New Food). The Ministry of Public Health defines “Novel Food” with three criteria:

  • Novel Food refers to food or ingredients that have less than 15 years of documented history of consumption.

  • Novel Food refers to food or ingredients that are produced through processes that are not the standard methods typically used for that food, which significantly alters the components, structure, or form of that food, impacting its nutritional value, the chemical processes within living organisms, or the levels of undesirable substances.

  • Novel Food refers to food products that contain components defined in criteria 1) and 2).

To explain it simply, Novel Food means:

  • Food that has not previously been used for consumption or has been consumed for less than 15 years.

  • Food that uses innovative technologies or methods that have never been utilized before in its production.

Examples of Novel Food include:

  • Plant-based Protein derived from alternative proteins such as plants, fungi, and various grains.

  • Cultured Meat – the cultivation of animal tissue samples to increase quantity.

  • Innovative food examples, such as using Nano Food to create chili paste powder.

  • Super Food – new foods that provide higher nutritional benefits, such as insects and seaweed.

2. Functional Food Industry Trend

Functional Food refers to normal food that has been enhanced with specific nutritional benefits aimed at promoting health in various aspects while reducing less beneficial nutrients, such as Lactose Free milk for those allergic to cow's milk, or protein bars that increase benefits using powdered cricket protein.

3. Organic Food Industry Trend

This trend involves the processing of products made from food raw materials grown using organic farming methods that consider the interdependence of natural ecosystems, reducing or eliminating chemical usage, resulting in food raw materials that are free from contaminants, beneficial for consumers, and good for the environment.

4. Zero Waste Cooking Industry Trend

This trend focuses on reducing food waste throughout the food production process, from cultivation, transportation, processing, cooking, to product packaging. Food waste buried in landfills, even when decomposed naturally, contributes to methane emissions that escalate global warming.
