โอกาสทางธุรกิจของอุตสาหกรรม “อาหารแห่งอนาคต (Future Food)”
คุณทราบหรือไม่ว่า ทำไมอุตสาหกรรม “อาหารแห่งอนาคต (Future Food)” ถึงถูกจัดเป็น Mega Trend ของโลก ที่มีโอกาสทางธุรกิจสูง ?
ด้วยข้อจำกัดในการผลิตอาหารแบบเดิม ทั้งพื้นที่ ทรัพยากรที่ใช้เลี้ยงสัตว์ อย่างน้ำและอาหาร รวมถึงสภาวะโลกร้อน (Global Warming) ที่เพิ่มสูงขึ้นเรื่อย ๆ จากกิจกรรมปล่อยก๊าซเรือนกระจก ทั้งภาคอุตสาหกรรม และภาคปศุสัตว์ที่ปล่อยก๊าซคาร์บอนไดออกไซด์สู่โลกสูงเป็นอันดับสอง รองจากภาคอุตสาหกรรม ส่งผลให้สภาพอากาศแปรปรวน พื้นที่เพาะปลูกได้รับผลกระทบ และผลผลิตทางการเกษตรตกต่ำ
ด้วยเหตุนี้ ปริมาณผลผลิตทางการเกษตรจากการเพาะปลูกแบบเดิม และเนื้อสัตว์จากการทำปศุสัตว์แบบเดิม จึงลดน้อยลงและไม่เพียงพอต่อความต้องการของประชากรโลกที่นับวันจะมีจำนวนเพิ่มสูงขึ้นเรื่อย ๆ ดังนั้น “อาหารแห่งอนาคต (Future Food)” จึงกลายมาเป็นคำตอบที่มาแทนที่อาหารดั้งเดิม เนื่องจากมีการนำเทคโนโลยีและนวัตกรรมมาสร้างแหล่งอาหารใหม่ ที่เพิ่มผลผลิตได้เร็วกว่า ใช้พื้นที่เพาะเลี้ยงน้อยกว่า ลดทรัพยากรอาหารในการเลี้ยงดู ที่สำคัญยังให้คุณค่าทางโภชนาการสูงและดีต่อความยั่งยืนของโลก เพราะลดการปล่อยก๊าซเรือนกระจก ลดการสร้างขยะเหลือทิ้ง (Zero Waste) จากกระบวนการผลิตตั้งแต่ต้นน้ำจนถึงปลายน้ำ
จากแนวโน้มการให้ความสำคัญต่อการพัฒนาอุตสาหกรรมที่เป็นมิตรต่อสิ่งแวดล้อม ทำให้อุตสาหกรรมอาหารแห่งอนาคตเป็นอุตสาหกรรมอันดับต้น ๆ ที่ได้รับความสนใจและมีการขับเคลื่อนจากประเทศต่าง ๆ ทั่วโลก โดยเฉพาะประเทศที่พัฒนาแล้ว จนทำให้อุตสาหกรรมอาหารแห่งอนาคตเกิดการเติบโตแบบก้าวกระโดด โดยในปี 2564 ตลาดอาหารแห่งอนาคตมีมูลค่าทางเศรษฐกิจของอุตสาหกรรมทั่วโลกสูง 122,927 ล้านบาท คาดการณ์ว่ามูลค่าเศรษฐกิจจะเติบโตเพิ่มเป็น 2 เท่าตัวในปี 2568 ตามการขยายตัวของผู้บริโภคอาหารแห่งอนาคตที่มีความต้องการแบบเฉพาะเจาะจง รวมถึงการพัฒนาของอาหารแห่งอนาคตที่ยังต่อยอดไปได้อีกไกล
นอกจากนี้ ผู้ประกอบการในกลุ่มอุตสาหกรรมอาหารแห่งอนาคตยังสามารถทำผลตอบแทนได้สูงกว่าอุตสาหกรรมอาหารดั้งเดิม เนื่องจากอาหารแห่งอนาคตสามารถเพิ่มมูลค่าได้สูงกว่าอาหารปกติ ทำให้มีโอกาสในการแข่งขันสูง ตอบโจทย์ผู้บริโภคที่มีความต้องการเฉพาะกลุ่มได้มากกว่าอาหารทั่วไป เห็นได้จากอัตรากำไรของผู้ประกอบการในต่างประเทศที่ทำธุรกิจ “Functional Foods” จะสามารถทำกำไรได้สูงกว่าธุรกิจ “Basic Foods” ถึงเกือบ 3 เท่าตัว (ที่มา : วิเคราะห์โดย Krungthai Macro Research โดยใช้ข้อมูลอัตรากำไรสุทธิเฉลี่ย 5 ปีย้อนหลัง จาก reuters.com)

อุตสาหกรรมอาหารแห่งอนาคต (Future Food) ของไทยได้รับแรงสนับสนุนที่ดีจากภาครัฐ
ในประเทศไทย ภาครัฐมีนโยบายผลักดันให้เกิดอุตสาหกรรม “อาหารแห่งอนาคต (Future Food)” ขึ้น โดยจัดอาหารแห่งอนาคตให้อยู่ในอุตสาหกรรมเป้าหมายกลุ่ม S-Curve ที่ได้รับประโยชน์ในการส่งเสริมต่าง ๆ จากภาครัฐ เพื่อผลักดัน GDP อุตสาหกรรมอาหารไทยให้บรรลุเป้าหมายที่ 1.35 ล้านล้านบาท ภายในปี 2569 โดยกระทรวงอุตสาหกรรมได้ออกแผนปฏิบัติการด้านการพัฒนาอุตสาหกรรมแปรรูปอาหาร ระยะที่ 1 พ.ศ. 2562-2570 ไว้ 4 มาตรการ ได้แก่
มาตรการสร้างนักรบอุตสาหกรรมอาหารพันธุ์ใหม่ (Food Warriors) เป็นมาตรการสร้างผู้ประกอบการอาหารรุ่นใหม่ตลอดห่วงโซ่อุปทาน ตั้งแต่ภาคการเกษตร ภาคการผลิต และภาคการตลาด เพื่อให้เป็นพลังขับเคลื่อนหลักในการสร้างมูลค่าเพิ่ม สร้างงาน สร้างรายได้ และสร้างการเติบโตให้เศรษฐกิจไทย โดยให้ความสำคัญกับการผลิตอาหารอนาคต โดยสิ่งที่คาดหวังว่าจะเกิดในอนาคต เช่น อาหารสุขภาพ อาหารจากเทคโนโลยีชีวภาพ และอาหารใหม่ เป็นต้น
มาตรการสร้างนวัตกรรมอาหารอนาคต (Future Food Innovation) เป็นมาตรการยกระดับนวัตกรรมอาหารสู่การผลิตเชิงพาณิชย์ โดยสร้างโครงสร้างพื้นฐานเพื่อเพิ่มความสามารถด้านวิทยาศาสตร์ เทคโนโลยี และนวัตกรรม โดยผลลัพธ์ที่คาดว่าจะเกิดขึ้น ได้แก่ ศูนย์ปฏิรูปอุตสาหกรรมอาหาร (Food Industrial Transformation Center) การสร้างห้องแล็บผลิตอาหารในอนาคต (Future Food Lab) หรือนวัตกรรมบรรจุภัณฑ์อัจฉริยะ (Intelligence Packaging)
มาตรการสร้างโอกาสทางธุรกิจเกษตรและอาหาร (New Marketing Platform) เป็นมาตรการสร้างโอกาสทางธุรกิจผ่านแพลตฟอร์ม (Platform) เพื่อให้ผู้ผลิตไทยมีบทบาทในตลาดโลก เชื่อมโยงการค้าสู่สากล รวมถึงสร้างเศรษฐกิจฐานรากให้เข้มแข็งด้วยวัฒนธรรมและความคิดสร้างสรรค์ และเชื่อมโยงผลิตภัณฑ์อาหารกับการท่องเที่ยว สิ่งที่คาดหวังให้เกิดในอนาคต เช่น การจัดกิจกรรมมหกรรมอาหาร (Food Expo) การพัฒนา Big Data แก่ SMEs การเปิด SMEs One Portal การพัฒนา Digital Value Chain การส่งเสริมและพัฒนาอุตสาหกรรมอาหาร โดยเฉพาะ SMEs เพื่อรองรับการท่องเที่ยวชุมชน
มาตรการสร้างปัจจัยพื้นฐานเพื่อเร่งการพัฒนาอุตสาหกรรม (Enabling) เป็นมาตรการสร้างปัจจัยเอื้อสู่การพัฒนาอุตสาหกรรมอาหาร และลดอุปสรรคในการประกอบธุรกิจ (Ease of Doing Business) โดยสร้างสภาพแวดล้อมส่งเสริมการพัฒนาอุตสาหกรรม 4.0 ได้แก่ การส่งเสริมการสร้างระบบตรวจสอบย้อนกลับอาหาร การยกระดับ SMEs Standard การสร้างระบบมาตรฐานเฉพาะ (มอก.S) การสร้างระบบมาตรฐานที่จะรองรับการพิสูจน์ (Identify) สารสกัดชนิดใหม่ของไทยทั้งจากสมุนไพรหรืออาหารเพื่อให้เป็นที่ยอมรับในตลาดทั้งระดับชาติและระดับสากล เป็นต้น ควบคู่ไปกับการเสริมสร้างความโปร่งใส การรับผิดชอบต่อสาธารณะ และการมีส่วนร่วมของภาคเอกชน
สืบเนื่องจากนโยบายภาครัฐที่เอื้อต่อการเติบโตของผู้ประกอบการในอุตสาหกรรมอาหารแห่งอนาคต ทำให้ในปัจจุบันประเทศไทยมีผลิตภัณฑ์อาหารแห่งอนาคตที่หลากหลายทยอยออกสู่ตลาด ซึ่งวางจำหน่ายทั้งในประเทศและต่างประเทศ สามารถจัดเป็นกลุ่มใหญ่ ๆ ได้ทั้งหมด 4 กลุ่ม โดยในปี 2564 สามารถส่งออกได้ 93.6 พันล้านบาท เติบโต 4.9 % YoY โดยผลิตภัณฑ์ที่ส่งออก ได้แก่
อาหารฟังก์ชัน (Functional Food) มีมูลค่าส่งออก 2 พันล้านบาท ขยายตัว 5.7 % YoY โดยผลิตภัณฑ์ที่ส่งออก ได้แก่
อาหารปรุงแต่งหรือซอสปรุงรสที่มีส่วนผสมของวิตามิน เกลือแร่ หรือใยอาหาร (71 % ของมูลค่าส่งออกอาหารฟังก์ชันทั้งหมด)
น้ำผลไม้ น้ำพืชผัก และเครื่องดื่ม (29 %)
อาหารใหม่ (Novel Food) มีมูลค่าส่งออก 7 พันล้านบาท หดตัว -6.0 % YoY โดยผลิตภัณฑ์ที่ส่งออก ได้แก่
โปรตีนจากพืช อาหารจากธัญพืช (75 % ของมูลค่าส่งออกอาหารใหม่ทั้งหมด)
โปรตีนเข้มข้น ผลิตภัณฑ์นมและครีม (24 %)
แมลงกระป๋อง (1 %)
อาหารทางการแพทย์ (Medical Food) มีมูลค่าส่งออก 6 พันล้านบาท ขยายตัว 51.6 % YoY โดยผลิตภัณฑ์ที่ส่งออก ได้แก่
อาหารเสริมผู้ป่วยหนัก (95 % ของมูลค่าส่งออกอาหารทางการแพทย์ทั้งหมด)
อาหารที่ใช้ในทางการแพทย์อื่น ๆ (4 %)
วิตามินพรีมิกซ์เสริมคุณค่าอาหาร (1 %)
อาหารอินทรีย์ (Organic Food) มีมูลค่าส่งออก 2 พันล้านบาท หดตัว -25.2 % YoY โดยผลิตภัณฑ์ที่ส่งออก ได้แก่
ข้าวกล้องอินทรีย์ (70 % ของมูลค่าส่งออกอาหารอินทรีย์ทั้งหมด)
ผลไม้อินทรีย์ (30 %)

Business opportunities in the 'Future Food' industry
Do you know why the 'Future Food' industry is classified as a global Mega Trend with high business opportunities?
Due to the limitations in traditional food production, including land and resources used for livestock such as water and feed, as well as the increasingly alarming global warming resulting from greenhouse gas emissions from both the industrial and livestock sectors, which rank second in carbon dioxide emissions globally after the industrial sector, the climate is becoming more erratic, agricultural areas are affected, and agricultural yields are declining.
As a result, the quantity of agricultural products from traditional cultivation and meat from conventional livestock farming is decreasing and insufficient to meet the demands of a growing global population. Therefore, 'Future Food' is emerging as a solution to replace traditional food, as it involves the implementation of technology and innovation to create new food sources that can increase yields more rapidly, require less cultivation area, reduce resources needed for nurturing, and, importantly, provide high nutritional value while being sustainable for the planet, as it reduces greenhouse gas emissions and minimizes waste (Zero Waste) from the production process from upstream to downstream.
With the growing emphasis on developing environmentally friendly industries, the Future Food industry has become one of the most prominent industries attracting attention and being driven by countries worldwide, especially developed nations, leading to a remarkable growth in the Future Food industry. In 2021, the global economic value of the Future Food market was 122.927 billion Baht, with projections indicating that the economic value will double by 2025 due to the expansion of consumers seeking specific food preferences, along with continued development opportunities for Future Food.
Furthermore, operators in the Future Food industry can achieve higher returns compared to the traditional food industry, as Future Food can create more value than regular food, providing a competitive advantage that better meets the needs of niche consumers. For example, the profit margins for operators in foreign countries engaged in 'Functional Foods' can yield profits nearly three times higher than those in 'Basic Foods' business (Source: Analysis by Krungthai Macro Research based on five-year average net profit margin data from reuters.com)

The Future Food industry in Thailand receives strong support from the government.
In Thailand, the government has policies to promote the growth of the 'Future Food' industry by designating Future Food as part of the S-Curve target industries, which receive various promotional benefits from the government to boost Thailand's food industry GDP to reach 1.35 trillion Baht by 2026. The Ministry of Industry has issued an action plan for the development of the food processing industry for the first phase (2019-2027) with four measures:
Measure to create new Food Warriors is aimed at developing new entrepreneurs throughout the supply chain, from agriculture, production, to marketing, to serve as the main driving force for value creation, job creation, income generation, and economic growth of Thailand, with a focus on producing future food, including expected future innovations like health foods, biotechnological foods, and novel foods.
Measure to create Future Food Innovation aims to elevate food innovation to commercial production by establishing infrastructure to enhance capabilities in science, technology, and innovation. Expected outcomes include the establishment of the Food Industrial Transformation Center, Future Food Lab, and Intelligent Packaging innovations.
Measure to create business opportunities in agriculture and food (New Marketing Platform) focuses on creating business opportunities through platforms to enable Thai producers to play a role in the global market, connecting trade to the international level, strengthening the grassroots economy through culture and creativity, and linking food products with tourism. Future expectations include organizing food expos, developing Big Data for SMEs, launching SMEs One Portal, advancing a Digital Value Chain, and promoting and developing the food industry, especially SMEs to support community tourism.
Measure to create enabling factors for accelerating industrial development aims to facilitate the growth of the food industry and reduce barriers to doing business (Ease of Doing Business) by creating an environment conducive to developing Industry 4.0, including promoting food traceability systems, elevating SMEs standards, establishing specific standards (TIS), and creating standards that will support the validation of new extracts from Thai herbs or foods to gain acceptance in both national and international markets, alongside enhancing transparency, public accountability, and private sector participation.
As a result of government policies conducive to the growth of operators in the Future Food industry, Thailand currently has a diverse range of Future Food products entering the market, available both domestically and internationally, categorized into four major groups. In 2021, exports reached 93.6 billion Baht, growing by 4.9% YoY, including the following exported products:
Functional Food has an export value of 2 billion Baht, growing by 5.7% YoY, with exported products including:
Food seasoning or sauces containing vitamins, minerals, or dietary fiber (71% of total Functional Food export value)
Fruit juices, vegetable juices, and beverages (29%)
Novel Food has an export value of 7 billion Baht, contracting -6.0% YoY, with exported products including:
Plant-based protein and grain-based foods (75% of total Novel Food export value)
Concentrated protein, dairy products, and cream (24%)
Canned insects (1%)
Medical Food has an export value of 6 billion Baht, growing by 51.6% YoY, with exported products including:
Foods for severely ill patients (95% of total Medical Food export value)
Other medically-used foods (4%)
Vitamin premix to enhance food value (1%)
Organic Food has an export value of 2 billion Baht, contracting -25.2% YoY, with exported products including:
Organic brown rice (70% of total Organic Food export value)
Organic fruits (30%)
