นอกจากนี้ ผลิตภัณฑ์ Cell Synapse Enhancer ยังได้รับรางวัลเหรียญทองจากงานประกวดนวัตกรรมที่ประเทศสวิตเซอร์แลนด์ ซึ่งเป็นการการันตีคุณภาพของผลิตภัณฑ์อีกด้วย รวมทั้งได้มีการต่อยอดนำผลิตภัณฑ์ Cell Synapse ไปใช้ในผลิตภัณฑ์ต่าง ๆ เช่น ผลิตภัณฑ์เสริมอาหารทรีวาน่าของบริษัทอินนาเธอร์ จำกัด ผลิตภัณฑ์อาหารเสริมคอลลาเจนของบริษัท มานา เนเจอร์อินโนเวชั่น จำกัด และมีพันธมิตรที่สนใจจะนำสาร Cell Enhancer ไปต่อยอดใช้ในผลิตภัณฑ์อื่น ๆ อีกหลายผลิตภัณฑ์

ผลิตภัณฑ์ Albupro Plus ซุปไข่ขาวสำหรับผู้ป่วยล้างไต ชนิดผง ซุปจากไข่ขาวเจ้าแรกในท้องตลาด โดยใช้ไข่ขาวสกัดด้วยกระบวนการพิเศษ ขจัดสารอะวิดินและไลโซไซม์ ทำให้ไม่ขัดขวางกระบวนการดูดซึมวิตามินบี รวมถึงมีโปรตีนอัลบูมินสูง ตรงตามความต้องการของผู้ป่วยล้างไต จุดเด่นของผลิตภัณฑ์ Albupro Plus คือ เป็นผลิตภัณฑ์อาหารทางการแพทย์ที่ออกแบบมาเพื่อผู้ป่วยล้างไตโดยเฉพาะ เนื่องจากผลิตภัณฑ์ไม่ได้มีแค่โปรตีนสูง แต่ยังมีสารอาหารครบถ้วนทั้งคาร์โบไฮเดรต ไขมัน วิตามิน เกลือแร่ ในปริมาณที่เหมาะสม ตอบโจทย์ผู้ป่วยล้างไตที่มักจะเกิดภาวะทุพโภชนาการ อีกทั้งยังมีรสชาติอร่อย รับประทานง่าย และเป็นที่พึงพอใจของกลุ่มผู้ป่วยความท้าทายในการวิจัยไม่ใช่เพียงการพัฒนาผลิตภัณฑ์ที่มีประโยชน์และตอบโจทย์ผู้ประกอบการเท่านั้น แต่ตัวผลิตภัณฑ์ยังต้อง “ได้รับความพึงพอใจ” จากกลุ่มเป้าหมาย และตรงตามความต้องการของตลาด โดยทีมวิจัยจากสำนักงานพัฒนาวิทยาศาสตร์และเทคโนโลยีแห่งชาติ (สวทช.) เปิดเผยว่า ก่อนพัฒนาผลิตภัณฑ์ต้องไปศึกษาด้วยว่ากลุ่มผู้ป่วยล้างไตชอบรสชาติแบบใด ต้องนำอัลบูมินมาเติมสารอาหารอะไรบ้าง เติมรสชาติอย่างไร ความเข้มข้นเท่าไร กระทั่งเมื่อพัฒนาผลิตภัณฑ์ต้นแบบเสร็จ จากนั้นทีมวิจัยได้มีการนำไปทดสอบกับกลุ่มคนปกติก่อนว่ารสชาติ ความข้นหนืด เป็นที่ยอมรับได้หรือไม่ ถ้าเป็นที่ยอมรับจะนำไปทดสอบในผู้ป่วยล้างไตอีกครั้งว่า ปัจจุบันผลิตภัณฑ์ที่ออกแบบมามี 5 รสชาติ ซึ่งมีทั้งรูปแบบชงดื่มและซุปนั้น ผลิตภัณฑ์แบบใด รสชาติแบบใด ที่เข้ากับผู้ป่วยล้างไตได้ดีที่สุดผลิตภัณฑ์เครื่องดื่มดาร์กช็อกโกแลตผสมคาเคาออร์แกนิก (เมล็ดโกโก้ดิบ) เครื่องดื่มที่ช่วยพัฒนาในเรื่องการผ่อนคลายสมอง ร่างกาย และช่วยให้ความทรงจำได้ดี ทีมวิจัยจากภาควิชาโภชนวิทยา คณะสาธารณสุขศาสตร์ มหาวิทยาลัยมหิดล เปิดเผยว่า ทุกวันนี้คุณประโยชน์หรือสรรพคุณของอาหารฟังก์ชันและผลิตภัณฑ์อาหารเสริมสุขภาพส่วนใหญ่ล้วนมาจากการอ้างอิงงานวิจัยหรือข้อมูลสารสำคัญที่ใช้เป็นส่วนประกอบในผลิตภัณฑ์นั้น ๆ เช่น หากผลิตภัณฑ์มีส่วนประกอบของขิง จะเชื่อว่ามีส่วนช่วยในการย่อยอาหาร ลดอาการท้องอืด ท้องเฟ้อ แต่ในความเป็นจริงแล้ว ผลิตภัณฑ์จะมีผลต่อร่างกายเช่นนั้นจริงหรือไม่ ต้องอาศัย “การวิจัยทางคลินิก”อย่างไรก็ตาม การนำผลงานวิจัยถึงสารสำคัญต่าง ๆ มาใช้อ้างอิงไม่สามารถยืนยันได้ถึงประสิทธิภาพของผลิตภัณฑ์ได้ทั้งหมด เพราะอย่าลืมว่าในการพัฒนาผลิตภัณฑ์ ผู้ประกอบการจะต้องนำสาระสำคัญหรือวัตถุดิบ ซึ่งมีที่มาแตกต่างกัน มาผสมกับส่วนผสมต่าง ๆ และยังต้องผ่านกระบวนการผลิต รวมถึงการเก็บรักษาที่ไม่เหมือนกัน ดังนั้น ผลที่เกิดขึ้นต่อร่างกายอาจจะแตกต่างกันไปด้วย การวิจัยเชิงคลินิกกับผลิตภัณฑ์โดยตรงจึงเป็นสิ่งที่พิสูจน์ได้ว่าผลิตภัณฑ์นั้น ๆ มีผลต่อร่างกายตามที่ตั้งเป้าไว้หรือไม่ ซึ่งงานวิจัยเชิงคลินิกเป็นงานวิจัยที่ศึกษาในมนุษย์ เป็นการศึกษาว่าหลังจากที่รับประทานอาหารชนิดใดชนิดหนึ่งเข้าไปแล้วในระยะเวลาต่าง ๆ ซึ่งอาจเป็นการศึกษากลไกการดูดซึมหรือศึกษาผลที่เกิดขึ้นหลังจากได้รับเข้าไปแล้วระยะเวลาหนึ่ง เช่น 30 วัน 60 วัน หรือ 120 วัน จะมีผลเปลี่ยนแปลงต่อระบบต่าง ๆ ของร่างกายอย่างไรบ้าง ทั้งความปลอดภัย และการส่งผลต่อตับ ไตในการวิจัยว่าผลิตภัณฑ์เครื่องดื่มดาร์กช็อกโกแลตผสมคาเคาออร์แกนิก (เมล็ดโกโก้ดิบ) จะมีผลช่วยพัฒนาในเรื่องการผ่อนคลายสมอง ร่างกาย และช่วยให้ความจำได้ดีขึ้นตามเป้าหมายที่ต้องการหรือไม่ ทีมวิจัยจะร่วมกันวางแผนออกแบบกระบวนการวิจัยเชิงคลินิก ซึ่งต้องมีความรอบคอบอย่างมาก รวมทั้งยังมีการทดสอบและเก็บข้อมูลพฤติกรรมการใช้ชีวิต รวมทั้งการเปลี่ยนแปลงทางด้านร่างกายในส่วนต่าง ๆ จากอาสาสมัครต่อเนื่องเป็นระยะเวลา 4 สัปดาห์ กลุ่มอาสาสมัครจะต้องบันทึกข้อมูลต่าง ๆ เช่น การรับประทานอาหาร การขับถ่าย การนอนหลับ นอกจากนี้ต้องมีการตรวจสอบการเปลี่ยนแปลงของระบบต่าง ๆ ในร่างกาย เช่น ความจำ การเปลี่ยนแปลงของการรับรู้ การตอบสนองของสมอง การเปลี่ยนแปลงของสารชีวเคมีต่าง ๆ เช่น ระดับคอเลสเตอรอล ไขมัน ตัวชี้วัดการอักเสบของร่างกายอย่างต่อเนื่อง เพื่อใช้วิเคราะห์ผล ซึ่งผลการวิจัยในเชิงคลินิกของผลิตภัณฑ์เครื่องดื่มดาร์กช็อกโกแลตผสมคาเคาออร์แกนิกที่นำมาทดสอบพบว่า ได้ผลค่อนข้างดี สิ่งที่เห็นได้ชัด คือ ช่วยให้ความจำดีขึ้น ความเหนื่อยล้าลดลง ความดันโลหิตลดลง แต่ก็ยังมีบางอย่างที่ยังไม่เห็นผลชัดเจนตามที่ผู้ประกอบการตั้งเป้าไว้ ซึ่งทีมวิจัยได้ให้คำแนะนำถึงแนวทางปรับสูตรเพื่อพัฒนาผลิตภัณฑ์ให้ได้ตามเป้าหมายในอนาคตผลิตภัณฑ์ Peapo Meat เป็นการพัฒนาต่อยอดจากงานวิจัยของมหาวิทยาลัยฟาฏอนี ที่มุ่งเน้นพัฒนาผลิตภัณฑ์อาหารฮาลาลและมีคุณประโยชน์ต่อผู้บริโภค โดยการพัฒนาเทคนิคกระบวนการผลิตใน 3 ขั้นตอน ได้แก่ กระบวนการทำไขมันเพื่อให้มีลักษณะทางกายภาพคล้ายเนื้อสัตว์ กระบวนการผลิตเนื้อสัมผัสจากการทำ Textured vegetable protein (TVP) และกระบวนการปรับแต่ง สี กลิ่น รส เพื่อให้ได้ผลิตภัณฑ์เนื้อเบอร์เกอร์ที่ทำจากพืช แต่ให้มีลักษณะทางกายภาพและรสชาติแบบเดียวกับเนื้อสัตว์ เพื่อให้ผู้บริโภคยังคงได้รับประสบการณ์ในการบริโภคอาหารเสมือนว่าได้รับประทานจากเนื้อสัตว์ มีประโยชน์ต่อสุขภาพ และสามารถตอบโจทย์ผู้บริโภคที่หันมาให้ความใสใจกับสุขภาพได้เป็นอย่างดีในกระบวนการผลิตมีการใช้ “ถั่วหรั่ง” ซึ่งเป็นพืชท้องถิ่นที่ปลูกมากในพื้นที่จังหวัดสงขลา นราธิวาส ยะลา ปัตตานี และพัทลุง มาเป็นวัตถุดิบหลักในการพัฒนานวัตกรรมโปรตีนจากพืช ซึ่งถั่วหรั่งเป็นพืชที่มีโปรตีนสูง โดยมีส่วนประกอบของกรดอะมิโนชนิด “เมทไธโอนีน (Methionine)” สูง ซึ่งช่วยป้องกันการสะสมของไขมันและยังอุดมไปด้วยเส้นใย2. อาหารจากการเพาะเลี้ยงเซลล์ (Cell-based Food/ Cultured Meat) ถือว่าเป็นอาหารแห่งอนาคตที่อยู่ในกระแสเมกะเทรนด์ ด้วยปัจจัยบวกหลายด้าน อาทิ ลดการฆ่าสัตว์ ลดการปล่อยก๊าซเรือนกระจก ลดการปนเปื้อนจากเชื้อโรค และยังสามารถเพิ่มคุณค่าสารอาหารได้ในกระบวนการผลิต อีกทั้งยังมีประเภทของเนื้อที่หลากหลาย อาทิ เนื้อวัว ไก่ สุกร แกะ แพะ และปลา เป็นทางเลือกให้ผู้บริโภค ทำให้กระแสนิยมอาหารจากการเพาะเลี้ยงเซลล์ได้รับความนิยมมากขึ้น ปัจจุบันเนื้อเทียมที่มีขายโดยทั่วไป มักมีการทำมาจาก Plant Based Protein เสียส่วนใหญ่ เช่น ถั่วชนิดต่าง ๆ ข้าวสาลี ธัญพืช การเข้ามาของ Cultured Meat จึงถือเป็นอีกจุดเปลี่ยนที่สำคัญ และยังมีไม่กี่ประเทศที่ออกกฎหมายเรื่องการขายเนื้อเทียมประเภทสังเคราะห์จากห้องแล็บสู่ภาคประชาชนอย่างจริงจังAllied Market Research ประเมินมูลค่าตลาดอาหารจากการเพาะเลี้ยงเซลล์โลกในปี 2564 ไว้ที่ 1.6 ล้านดอลลาร์สหรัฐฯ และในอนาคต Allied Market Research คาดว่าตลาดอาหารเพาะเลี้ยงเซลล์จะมีมูลค่าถึง 2,788.1 ล้านดอลลาร์สหรัฐฯ ในปี 2573 หรือมีอัตราการเติบโตเฉลี่ย (Cumulative Annual Growth Rate: CAGR) 128.5 % ต่อปี โดยมีผู้ประกอบการหรือผู้ลงทุนในอุตสาหกรรมอาหารเพาะเลี้ยงเซลล์ อาทิ บริษัท Aleph Farms บริษัท Cubiq Foods บริษัท Future Meat Technologies บริษัท Meatable บริษัท Memphis Meats บริษัท Mission Barns บริษัท Mosa Meat บริษัท Redefine Meat และ บริษัท Vow Groupการพัฒนา Cultured Meat ในประเทศไทย ปัจจุบันบริษัท ไทยฟู้ดส์ กรุ๊ป จำกัด (มหาชน) ได้ร่วมมือกับจุฬาลงกรณ์มหาวิทยาลัย โดยศูนย์ Veterinary Stem Cell and Bioengineering Innovation Center (VSCBIC) คณะสัตวแพทยศาสตร์ เพื่อพัฒนาเนื้อหมูรูปแบบ Cultured Meat แต่ยังอยู่ระหว่างการวิจัยและพัฒนาเพื่อให้ได้เนื้อหมูที่มีรสสัมผัส คุณค่าทางอาหาร และต้นทุนที่ใกล้เคียงกับอุตสาหกรรมการผลิตในปัจจุบัน รวมทั้งสามารถแข่งขันกับต่างประเทศได้นอกจากนี้ ภายใต้เมืองนวัตกรรมอาหาร (Food Innopolis) ของสำนักงานพัฒนาวิทยาศาสตร์และเทคโนโลยีแห่งชาติ (สวทช.) ได้จัดให้มีศูนย์บริการเบ็ดเสร็จ (One-Stop Service) เพื่อให้บริการแบบครบวงจรด้านการวิจัยพัฒนาและนวัตกรรมด้านอาหาร โดยมุ้งเน้นการสร้างสภาพแวดล้อมที่เหมาะสม เอื้อต่อการทำกิจกรรมวิจัยและนวัตกรรม (Innovation Ecosystem) เพื่อพัฒนาอุตสาหกรรมอาหารให้เติบโตอย่างยั่งยืนและแข่งขันในระดับสากลได้ จึงเป็นโอกาสสำหรับผู้ประกอบการที่สนใจธุรกิจ Cultured Meat และต้องการต่อยอดการพัฒนาสู่การค้าเชิงพาณิชย์ต่อไป3. อาหารทางการแพทย์ (Medical Food) โครงสร้างประชากรที่มีความหลากหลายมากขึ้น ทำให้มีอิทธิพลต่อคุณภาพอาหารเป็นหลัก โดยเฉพาะจากความต้องการสารอาหารที่แตกต่างกัน นอกจากนี้ ความหลากหลายของโครงสร้างประชากรในอนาคตไม่ได้จำกัดเพียงแค่อายุ (สังคมเด็ก วัยแรงงาน และผู้สูงอายุ) แต่ยังครอบคลุมถึงสังคม วัฒนธรรม ศาสนา รายได้ กรุ๊ปเลือด และโรคประจำตัว จึงทำให้ความต้องการของผู้บริโภคแตกต่างกัน ทำให้มีเมกะเทรนด์ด้านโภชนาการเฉพาะบุคคล (Personalized Nutrition) ซึ่งเป็นการออกแบบโภชนาการให้เหมาะสมกับร่างกายของแต่ละบุคคลโดยคำนึงจากการใช้ชีวิต สารอาหาร และสุขภาพ อย่างไรก็ตาม กระแสดังกล่าวเป็นกระบวนการสร้างหลักสูตรอาหาร (Nutrition program) ที่กระบวนการผลิตอาหารโดยทั่วไปจะไม่สามารถตอบโจทย์ได้ โดยเฉพาะสูตรอาหารสำหรับผู้ที่เผชิญภาวะทุพโภชนาการ ตลอดจนผู้มีความต้องการอาหารพิเศษ ไม่ว่าจะเป็นเด็กทารก ผู้สูงอายุ ผู้ป่วย หรือนักกีฬาที่ต้องได้รับสารอาหารเพิ่มเติมกว่าคนปกติ นำมาสู่อาหารแห่งอนาคต กลุ่มอาหารทางการแพทย์ (Medical Food) ซึ่งเป็นผลิตภัณฑ์ที่ไม่ใช่ยาหรืออาหารเสริม โดยกลุ่มเป้าหมาย คือ ผู้ที่ต้องการโภชนาการที่เหมาะสมกับตนเองหรือผู้ป่วยที่ต้องรักษาโรคเป็นการเฉพาะ อาทิ โรคเกี่ยวกับระบบเผาผลาญ โรคลำไส้แปรปรวน โรคอัลไซเมอร์ อาการแพ้แลคโตส อาการแพ้อาหารบางชนิด หรือผู้สูงอายุที่มีระบบย่อยอาหารและการดูดซึมอาหารเสื่อม ซึ่งผู้ป่วยเหล่านี้จะมีความต้องการประเภทอาหาร สารอาหาร และคุณสมบัติของอาหารในสัดส่วนที่แตกต่างจากผู้บริโภคทั่วไปปี 2564 Grand View Research คาดว่า ตลาดอาหารทางการแพทย์จะมีมูลค่า 18.5 พันล้านดอลลาร์สหรัฐฯ และจะเพิ่มเป็น 23.4 พันล้านดอลลาร์สหรัฐฯ ในปี 2568 หรือมีอัตราการเติบโต (CAGR) เฉลี่ย 6.0 % ต่อปี โดยมีผู้ประกอบการในอุตสาหกรรมอาหารทางการแพทย์ อาทิ Donane, Nestle, Abbott, Targeted Medical Pharma, Victus, Primus Pharmaceuticals, Fresenius Kabi AG, Meiji Holdings และ Mead Johnson & Companyตัวอย่างนวัตกรรมทางด้านอาหารทางการแพทย์ (Medical Food) ที่สร้างจากงานวิจัยและองค์ความรู้ของคนไทย ได้แก่ผลิตภัณฑ์ข้าวไทยเพื่อผู้ป่วยเบาหวาน เป็นอาหารทางการแพทย์สำหรับผู้ป่วยเบาหวาน มีสูตรและกระบวนการผลิตที่มีความเฉพาะ เพื่อให้ได้ผลิตภัณฑ์ที่มีสารอาหารครบทุกชนิดในปริมาณที่เพียงพอต่อตามความต้องการทางโภชนาการของผู้ป่วยทีมวิจัยจากคณะสาธารณสุขศาสตร์ มหาวิทยาลัยมหิดล เปิดเผยว่า ได้ริเริ่มโครงการวิจัยพัฒนาผลิตภัณฑ์อาหารทางการแพทย์สำหรับผู้ป่วยเบาหวาน โดยใช้ข้าวเป็นวัตถุดิบหลักเพื่อทดแทนผลิตภัณฑ์นำเข้าจากต่างประเทศ โดยได้เล่าถึงที่มาของโครงการวิจัยว่า เนื่องจากผลิตภัณฑ์อาหารทางการแพทย์สำหรับผู้ป่วยเบาหวาน มีความจำเป็นสำหรับผู้ป่วย และมีความต้องการเพิ่มมากขึ้นอย่างต่อเนื่อง ตามจำนวนผู้ป่วย หรือแม้กระทั่งผู้ที่ต้องการควบคุมระดับน้ำตาลในเลือดที่เพิ่มมากขึ้น ผลิตภัณฑ์ที่จำหน่ายในท้องตลาดส่วนใหญ่นำเข้ามาจากต่างประเทศและมีราคาแพง ผู้ป่วยที่มีความจำเป็นต้องบริโภคต้องแบกรับค่าใช้จ่ายสูง ที่ผ่านมาอาหารทางการแพทย์ที่เป็นผลิตภัณฑ์ทดแทนคาร์โบไฮเดรตส่วนใหญ่ จะใช้แป้งดัดแปลงจากข้าวโพด หรือมันสำปะหลัง รวมถึงใช้โปรตีนจากน้ำนม ยังไม่พบว่ามีการใช้ข้าวเป็นวัตถุดิบในผลิตภัณฑ์ดังกล่าว อีกทั้งเป็นความต้องการของผู้ป่วยคนไทยที่ชอบบริโภคข้าวมากกว่าอาหารทางการแพทย์ที่มีส่วนผสมของน้ำนม ข้อดีจากการใช้ข้าวไทยเป็นวัตถุดิบในการผลิต ก็คือ นอกจากจะช่วยลดต้นทุนการผลิตแล้ว ยังเป็นการทำให้ข้าวไทยมีมูลค่าเพิ่มขึ้น และช่วยให้เกษตรกรขายข้าวได้มากขึ้นอีกด้วยผลิตภัณฑ์ข้าวไทยเพื่อผู้ป่วยเบาหวานที่ทีมวิจัยคิดค้นขึ้นนี้ มีสูตรและกระบวนการผลิตที่มีความเฉพาะ เพื่อให้ได้ผลิตภัณฑ์ที่มีสารอาหารครบทุกชนิดในปริมาณที่เพียงพอต่อตามความต้องการทางโภชนาการของผู้ป่วย โจทย์ที่น่าสนใจมีอยู่ว่าคาร์โบไฮเดรตที่มีอยู่ในผลิตภัณฑ์ จะต้องไม่ดูดซึมอย่างรวดเร็วหรือทำให้น้ำตาลในเลือดของผู้ป่วยเพิ่มขึ้นอย่างรวดเร็ว ประกอบกับผลิตภัณฑ์ต้องมีลักษณะทางกายภาพที่เหมาะสมสำหรับการให้ทางสายให้อาหาร อีกทั้งยังมีการใช้โปรตีนผสมจากพืชที่มีชนิดและปริมาณของกรดอะมิโนที่จำเป็นต่อการสร้างโปรตีนชนิดต่างๆ ในร่างกาย สำหรับผู้ป่วยบางรายที่มีการแพ้โปรตีนนม หรือไข่ จึงได้มีการคิดค้นสูตรและกระบวนการผลิตภายใต้แนวคิด “การแยกส่วนของข้าวออก แล้วเติมกลับเข้าในผลิตภัณฑ์เพื่อปรับปรุงให้ได้คุณลักษณะที่ต้องการ” หรือ “remove to improve” เพื่อให้สามารถนำข้าวไทยมาใช้เป็นส่วนประกอบหลักของผลิตภัณฑ์และผลิตเพื่อจำหน่ายได้ในระดับอุตสาหกรรมผลิตภัณฑ์ ONCE PRO เป็นอาหารทางการแพทย์ (Medical Food) ที่มีค่าดัชนีน้ำตาลต่ำ 4. อาหาร Zero Waste Cooking FMCG Gurus เผยว่า ผู้บริโภคทั่วโลก 74 % พยายามที่จะลดขยะอาหาร (Food Waste) และกว่า 74 % มีความห่วงใยต่อสภาพแวดล้อม เทรนด์ดังกล่าวสะท้อนถึงผู้บริโภคที่ตระหนักถึงการเปลี่ยนแปลงทางธรรมชาติ สิ่งแวดล้อม และสิ่งมีชีวิตมากขึ้น ประกอบกับกระแสอนุรักษ์ธรรมชาติและสิ่งแวดล้อมที่เข้มข้นขึ้นในระยะหลัง ทำให้ผู้บริโภคทยอยหันมาบริโภคอาหารที่ตอบโจทย์เมกะเทรนด์ด้านธรรมชาติและสิ่งแวดล้อม หรือ “กรีนเมกะเทรนด์” (Green Megatrend) โดยเน้นการบริโภคที่ตอบโจทย์ความยั่งยืนทางธรรมชาติและการรับผิดชอบต่อสังคม เช่น บรรจุภัณฑ์อาหารที่สามารถรับประทานได้ อาหารที่ไม่ได้มาจากการทำลายธรรมชาติ อาหารที่ช่วยลดปริมาณขยะอาหาร

ตัวอย่างนวัตกรรมทางด้านอาหาร Zero Waste Cooking ที่สร้างจากงานวิจัยและองค์ความรู้ของคนไทย ได้แก่

  • ผลิตภัณฑ์ฟัวกราส์ตับห่านจากพืช เป็นนวัตกรรมซูเปอร์ฟู้ดทดแทนตับห่าน จากวัตถุดิบผลผลิตทางการเกษตรเหลือทิ้งของบ้านเราในรูปแบบ Zero Waste และ BCG โดยทำการคัดเลือกพืชที่มีโปรตีนใกล้กับเนื้อสัตว์จนได้เม็ดขนุน เนื่องจากเป็นของเหลือจากกระบวนการผลิตเนื้อขนุนอบแห้งทอดกรอบ และกากเมล็ดกัญชงจากอุตสาหกรรมอาหารและเครื่องสำอาง นำมาทำฟัวกราส์ให้พลังงาน สารอาหาร และแร่ธาตุ อุดมด้วยโปรตีน กรดไขมันชนิดไม่อิ่มตัวที่ดีต่อสุขภาพ โอเมก้า 6 และโอเมก้า 3 สารต้านอนุมูลอิสระ ต้านการอักเสบ ปรับระบบภูมิคุ้มกัน ซ่อมแซมดีเอ็นเอ มีไฟเบอร์ที่เป็นอาหารพรีโบโอติกส์ของแบคทีเรียดีที่เป็นประโยชน์ต่อลำไส้ ช่วยในการปรับสมดุลของระบบย่อยอาหาร มีวิตามินบี 12 ที่หาได้ยากในพืชฟัวกราส์ตับห่าน เป็นอาหารโอชารสเลิศของฝรั่งเศสที่ได้รับความนิยมไปทั่วโลก เนื่องจากมีรสชาติอร่อยหอมกรุ่น นุ่มนวลแทบละลายได้เองในปาก ถือว่าเป็นอาหารสุดหรูราคาแพงอีกเมนูหนึ่ง แต่ก็มีไขมันมาก แคลอรี่และคอเรสเตอรอลสูง ซึ่งไม่เป็นผลดีต่อสุขภาพถ้าบริโภคมากเกินไป อีกทั้งไม่มีส่วนที่เป็นเส้นใยไฟเบอร์ และยังมีความเสี่ยงที่จะมีการปนเปื้อนจากเชื้อโรคได้อีกด้วย เพราะการปรุงของฟัวกราส์ตับห่านจะใช้ความร้อนไม่สูง จึงไม่สามารถฆ่าเชื้อโรคได้ทั่วถึง นอกจากนี้ ฟัวกราส์ตับห่านยังถูกแบนไม่ให้ผลิตและจำหน่ายแล้วในหลายประเทศ เนื่องจากมีการบังคับกรอกอาหารเลี้ยงตับพอกไขมันให้โตผิดปกติ ถือเป็นการทรมานสัตว์และขัดต่อหลักศาสนาในบางประเทศ

จากเหตุผลดังกล่าวทำให้ทีมวิจัยจากบริษัทอินทิกรัล-เทค จำกัด ได้เล็งเห็นถึงโอกาสของการคิดค้นสิ่งประดิษฐ์เพื่อทดแทนตลาดโลก ด้วย “ฟัวกราส์ จากพืชซูเปอร์ฟู้ด” จากวัตถุดิบผลผลิตทางการเกษตรเหลือทิ้งของบ้านเราในรูปแบบ Zero Waste และ BCG โดยทำการคัดเลือกพืชที่มีโปรตีนใกล้กับเนื้อสัตว์จนได้เม็ดขนุน เนื่องจากเป็นวัสดุเหลือจากกระบวนการผลิต ส่วนกระบวนการผลิต “ฟัวกราส์ จากพืชซูเปอร์ฟู้ด” ใช้ Food Tech แปรรูปด้วยเทคโนโลยี Extrusion ทำการผสมและนวดให้เป็นเนื้อเดียวกัน เกิดความร้อนขณะที่วัตถุดิบและส่วนผสมเคลื่อนที่จะมีแรงอัดเพิ่มขึ้น ผ่านหน้าพิมพ์ได้ผลิตภัณฑ์อาหารที่มีรูปร่างและเนื้อสัมผัสตามแบบที่กำหนดต้องการ และนำไปผ่านกระบวนการฆ่าเชื้อแบบ Retort ที่เป็นเทคโนโลยียืดอายุอาหาร สามารถเก็บรักษาไว้ที่อุณภูมิปกติได้นานถึง 18 เดือน โดยไม่ต้องแช่แข็ง และไม่ต้องใส่วัตถุกันเสีย

นอกจากนี้ ทีมวิจัยได้ทำการสำรวจมูลค่าตลาดโลกในปี 2564 พบว่า ฟัวกราส์ตับห่าน มีมูลค่า 1,320 ล้านเหรียญสหรัฐฯ และฟัวกราส์จากพืชในตลาดมังสวิรัติ วีแกน (Vegan) มีมูลค่า 26,830 ล้านเหรียญสหรัฐฯ จึงถือเป็นโอกาสทองของฟัวกราส์จากพืชซูเปอร์ฟู้ด ที่มีรสชาติและเนื้อสัมผัสใกล้เคียงกับฟัวกราส์จากสัตว์ และผ่านเกณฑ์มาตรฐานอาหารฮาลาล อีกทั้งมีคุณค่าทางโภชนาการที่ดีกว่า เสิร์ฟรับประทานได้แบบทอดและไม่ทอด ที่พร้อมจะผลิตออกสู่ตลาดโลก สามารถทำรายได้เข้าประเทศตามนโยบายส่งเสริมสินค้าเกษตรนวัตกรรมของภาครัฐ

Albupro Plus is the first egg white soup for dialysis patients in powder form, made using a special process to extract egg whites, removing avidin and lysozyme so that it does not hinder the absorption of vitamin B. It has a high albumin protein content that meets dialysis patients' needs. The distinctive feature of Albupro Plus is that it is a medical food product specifically designed for dialysis patients, as it does not only have a high protein content but also contains a complete range of nutrients including carbohydrates, fats, vitamins, and minerals in suitable amounts, addressing the nutritional deficiencies common in dialysis patients. Moreover, it has a delicious taste, is easy to consume, and is well-received by the patient group. The challenges in research not only involve the development of useful products that meet the needs of entrepreneurs but also ensuring that the products are “satisfactory” to the target audience and align with market demands. The research team from the National Science and Technology Development Agency (NSTDA) revealed that prior to developing the product, it was essential to study the flavor preferences of dialysis patients, determine necessary nutrients to add to albumin, and assess the desired flavor and intensity. After the prototype product was developed, the research team conducted tests with a group of healthy individuals to determine whether the flavor and consistency were acceptable. If acceptable, further tests would be conducted with dialysis patients to ascertain which of the five flavors currently designed—available in both drink powder and soup forms—best suited the dialysis patient demographic. The dark chocolate drink made with organic cacao (raw cocoa beans) aims to assist in relaxation for the brain and body while potentially enhancing memory. The research team from the Department of Nutrition, Faculty of Public Health, Mahidol University, stated that currently, the benefits or properties of functional foods and dietary supplements largely rely on references from research or data on active compounds used in those products. However, whether such effects actually occur in the body still depends on “clinical research.” Nonetheless, referencing the research findings of various active compounds cannot guarantee the efficacy of the products entirely. This is because product development requires entrepreneurs to mix active ingredients or raw materials from different sources with other components while undergoing various production processes and storage methods. Therefore, the effects on the body may vary. Clinical research directly related to products is essential to validate whether those products affect the body as anticipated. Clinical research involves studying human subjects to evaluate how consumption of specific foods affects bodily systems over varying periods, assessing the safety and impact on the liver and kidneys. The research on the dark chocolate drink with organic cacao aims to verify whether it can effectively contribute to relaxation and improved memory as intended. The research team will collaboratively plan and design the clinical research process, which requires great care, including testing and collecting data on lifestyle behaviors and bodily changes from volunteers over four weeks. The volunteers will be required to record various data points, including their diet, bowel movements, and sleep patterns. Additionally, monitoring body systems for changes, such as memory, perceptual changes, brain responses, and biochemical markers like cholesterol levels and inflammatory indicators, will occur continuously for analysis. The clinical research results of the dark chocolate drink with organic cacao being tested revealed favorable outcomes. Notably, there was an improvement in memory, a reduction in fatigue, and a decrease in blood pressure; however, some aspects did not show as clear results as anticipated by the entrepreneurs. The research team provided recommendations for formula adjustments to further develop the product towards future goals. The Peapo Meat product is an extension of research from Fatoni University, focused on the development of halal food products that also benefit consumers. The development involves production techniques in three steps: creating fats that physically resemble meat, producing a meat texture using Textured Vegetable Protein (TVP), and adjusting color, aroma, and flavor to create a plant-based burger product that simulates the physical characteristics and taste of meat, allowing consumers to enjoy a food experience akin to eating meat, while being health-conscious and catering to those who prioritize health. In the production process, 'Rang bean,' a local plant popular in Songkhla, Narathiwat, Yala, Pattani, and Phatthalung provinces, is used as the main raw material for developing plant-based protein innovations. Rang bean is a high-protein plant that contains a significant amount of the amino acid 'Methionine,' which aids in preventing fat accumulation, and is rich in fiber. Additionally, cell-based food/cultured meat is considered the food of the future, aligning with various positive megatrends such as reducing animal slaughter, minimizing greenhouse gas emissions, lowering contamination from pathogens, and enhancing nutritional value during production. Cultured meat also offers diverse types of meat, including beef, chicken, pork, lamb, goat, and fish, providing consumers with a range of options and contributing to the rising popularity of cell-based food. Currently, the majority of widely available meat substitutes are primarily made from plant-based proteins, such as various beans, wheat, and grains. The emergence of cultured meat is, therefore, a significant turning point, with only a few countries seriously regulating the sale of lab-synthesized meat products to the public. Allied Market Research valued the global cultured meat market at 1.6 million USD in 2021 and projects that it could reach 2,788.1 million USD by 2030, with a compound annual growth rate (CAGR) of 128.5% per year. Additionally, under the Food Innopolis initiative by the NSTDA, a One-Stop Service Center has been established to provide comprehensive research and development services for food innovation, aiming to create a conducive environment for research activities and innovation ecosystems to sustainably grow the food industry and compete globally. This presents opportunities for entrepreneurs interested in the cultured meat business and seeking to advance their development toward commercialization.

3. Medical Food: The increasingly diverse population structure significantly influences the quality of food, primarily driven by varying nutritional needs. Furthermore, the future diversity of the population is not limited to age (youth, working-age, and elderly) but encompasses society, culture, religion, income, blood type, and underlying health conditions, leading to distinct consumer demands. This trend fosters a mega-trend in personalized nutrition, which designs nutrition specifically suitable for individuals, taking into account lifestyle, nutrients, and health considerations. However, this trend is part of a process for creating nutrition programs, which traditional food production processes cannot adequately address, particularly for recipes catering to those experiencing malnutrition and special dietary needs, such as infants, the elderly, patients, or athletes requiring additional nutrients compared to the general population, transitioning into the future food sphere of medical food products, which are not medications or dietary supplements aimed at individuals needing nutrition tailored to their needs or patients who require specialized treatment for conditions such as metabolic disorders, irritable bowel syndrome, Alzheimer's disease, lactose intolerance, food allergies, or the elderly with diminished digestive and absorption systems. These patients often require types of food, nutrients, and characteristics different from those of the general consumer population. According to Grand View Research, the medical food market is projected to reach 18.5 billion USD in 2021 and is expected to grow to 23.4 billion USD by 2025, with an average compound annual growth rate (CAGR) of 6.0%. Key players in the medical food industry include Donane, Nestle, Abbott, Targeted Medical Pharma, Victus, Primus Pharmaceuticals, Fresenius Kabi AG, Meiji Holdings, and Mead Johnson & Company. Examples of medical food innovations developed from Thai research and knowledge include Thai rice products for diabetes patients, which is specifically designed as a medical food for diabetes, with specific formulas and production processes to ensure the product meets the comprehensive nutritional requirements of patients. The research team from the Faculty of Public Health, Mahidol University, initiated a project to develop medical food products for diabetes patients using rice as a primary raw material to replace imported products. They shared the background of the research, noting the increasing necessity and demand for medical food products for diabetes patients, correlating with the rising number of patients and those seeking better control over their blood sugar levels. Most products on the market are imported and expensive, posing a financial burden on patients who need to consume them regularly. Historically, most medical foods serving as carbohydrate substitutes have utilized modified starches from corn or cassava along with milk protein, but there has been no utilization of rice as a raw material in such products. Additionally, there is a clear demand from Thai patients who prefer consuming rice over medical products containing milk. The advantage of using Thai rice as a raw material is that it reduces production costs while simultaneously increasing the value of the rice and enhancing farmers' sales. The Thai rice product for diabetes patients developed by the research team has unique formulations and production processes that provide a comprehensive range of nutrients to meet patients’ nutritional needs. The key challenge is ensuring that the carbohydrates in the product do not absorb too quickly and spike blood sugar levels in patients. Moreover, the product must maintain physical characteristics that are suitable for administration via feeding tubes, and it includes a blend of plant-based proteins with essential amino acids sufficient for protein synthesis in the body.
